How is cassava Herb?
I had Cassava Herba of a restaurant near my work. There was red / green peppers and onions in it. He seemed to be sauteed in oil and may have had the garlic, but I need a good recipe to duplicate it.
Yucca With Garlic Sauce: Yucca con Mojo Ingredients * 6 pounds of whole cassava root, peeled and cut into sections 3 inch (fresh or frozen, about 5 pounds or 5 pounds frozen cut pieces) * 1 teaspoon salt 1 / 2 cup extra virgin olive oil * 2 onions Spanish small, sliced into thin rings * 12 cloves garlic, finely minced, mashed to a paste with mortar 1 / 4 teaspoon ground cumin * 1 / 3 cup sour orange juice (or 1 / 3 cup of the mixture of 1 / 2 lemon and 1 / 2 orange, reduce the amount if a less tart taste desired) * salt and freshly ground reach black pepper 1 Place the yuca in a large 6-quart pot. Cover with 5 liters of cold water 2. Add salt and boil over high heat. 3 Turn down the heat to medium and cook covered until feels tender when pierced with a fork, but still holds its shape, about 30 minutes. 4 Be careful not to overcook because cassava can become a sticky paste. 5 Turn the heat to low and leave cassava in the hot water until ready to serve. 6 For the mojo sauce 7 While cassava cooks, prepare the mojo sauce 8 Heat the olive oil until fragrant in a medium skillet over medium-high heat. Saute the onion rings until lightly browned. 9 Add the garlic and cumin and saute, stirring for a few seconds, until golden brown in 10 Pour bitter orange juice 11. Season with salt and pepper to taste. 12 Very quickly, the flight of cassava in a large colander and transfer to a decorative serving platter. 13 covers with mojo sauce and serve hot. 14 In Cuba and the Hispanic Caribbean, yucca with garlic sauce served with rice and beans and roast pork. Caribbean 0000000000000000000000000000000000000000000000 Yucca Fries Ingredients * 4 cups yucca root, peeled, cut into very small pieces around 2 ½ inches long * vegetable oil, as needed (for frying) * Salt and black pepper mango habanero sauce * 1 cup tomato ketchup 1 / 2 cup mango, very ripe, peeled, pit removed and diced 1 / 2 teaspoon habanero chile, pepper, chopped off (optional) 1 tablespoon fresh lemon juice Instructions 1 Heat top deep frying pot halfway with vegetable oil to 325 degrees F. 2 ADD 1 c. 3 potatoes, cassava, oil at a time and fry for about 2 ½ minutes or until browned, cooked and crisp. 4 Drain on paper towels, and season to taste. 5 Repeat with three other batches. 6 for the ketchup: Combine all ingredients in a blender, puree from 7 until smooth Serve with yucca fries 8 Note: I would like cassava dry with paper towels before frying much. 0000000000000000000000000000000000000000000000000
